Achappam Recipe

Ingredients:

• 1/2 kg Fine raw rice flour
• 2 Eggs
• 2 Cups grated coconut
• 2 tbsp Sugar
• 1/2 tsp Vanilla essence
• 2 tsp Sesame seeds
• 1 Pinch salt
• Oil to fry

How to make Achappam:
Place the flour in a big mixing bowl.
Now extract milk from the coconut and add it to the flour.
Beat eggs in a bowl, one at a time till firm.
Combine the beaten eggs to the flour mixture along with the sugar, sesame seeds, essence and salt, mix well.
Take a wok and heat oil in it.
Place the achappam mould in the very hot oil for a minute.
Dip three-fourth of the mould into the batter and then, put it in the hot oil.
The achappam will fall into the oil from the mould and turn it carefully to fry on the other side.
Once fried, remove it from the flame and drain the excess oil on clean paper towels.

Chinese Recipe : Vegetables Stir Fry (Vegetarian)

Ingredients:

  • 1/4 cup honey

  • 1/4 cup prepared stir fry sauce

  • 1/4 tsp. crushed red pepper flakes (1/4 to 1/2 tsp.)

  • 4 tsps. peanut oil or vegetable oil

  • 2 cups small broccoli florets

  • 2 cups small mushrooms

  • 1 small onion, cut into wedges and separated into 1-inch strips

  • 1 medium carrot, cut diagonally into 1/3 inch slices

Directions:

  1. Combine honey, stir-fry sauce and pepper flakes in small bowl; set aside.

  2. In wok or large skillet, heat oil over medium-high heat.

  3. Add vegetables and toss while cooking, about 2-3 minutes.

  4. Add honey sauce, stir until all vegetables are glazed and sauce is bubbly hot, about 1 minute.

  5. Serve as a vegetable side dish or over steamed rice or noodles for a main dish.

Chinese Recipe - Hot and Sour Soup

Serves 6

Ingredients:

  • 2 tbsp. vegetable oil
  • 1 med. onion, sliced
  • 3 carrots, thinly sliced
  • 3 cloves minced garlic
  • 1 tbsp. fresh ginger, minced
  • 4 c. chicken broth
  • 1 c. water
  • 2 tbsp. soy sauce
  • 6 oz. shiitake mushrooms
  • 1/3 c. sliced water chestnuts
  • 1/2 lb. sliced snow peas
  • 1 c. fresh bean sprouts
  • 1/4 c. rice-wine vinegar
  • 2 tbsp. sesame oil
  • Dash of chili oil

Directions:

  1. Heat 2 tbsp. vegetable oil in a heavy pot over medium heat.
  2. Add the onion and carrots; cook, stirring constantly for 3 minutes.
  3. Add the garlic and ginger; cook, stirring for 1 minute.
  4. Add chicken broth, water and soy sauce. Bring to a boil and cook for 2 minutes.
  5. Add the mushrooms and water chestnuts; boil for 1 minute.
  6. Turn off heat, add peas and bean sprouts. Cover and let rest for 2 minutes.
  7. Stir in rice-wine vinegar, sesame oil and chili oil. Heat through for 1 minute, serve immediately.

1 Preheat the oven to 350°F. Arrange a layer of tortilla chips along the bottom of a wide, shallow baking pan. It will make things easier if this baking pan also can be used as a serving pan, such as the ceramic platter shown in the photo above. The layer of tortilla chips can be a couple chips thick. Spread the refried beans over the chips (this is why you need extra thick chips, so they don’t break when encountering the beans). Sprinkle the grated cheese over the top of chips and beans. Sprinkle slices of jalapeƱo peppers over the cheese. Bake in oven for 10 minutes, or until cheese is melted. 5 minutes in a convection oven.

2 Serve with dollops of salsa, sour cream and guacamole, with chopped cilantro sprinkled on top.

Ingredients-bread crumbs-2 cups

3-4 crushed chillies

1 teaspoon lemon juice

Method-Mix the ingredients together.Make round balls and then deep fry.Delicious kaju potato rolls are ready.

Khasta Puris

Ingredients for puris-

1 cup rava

1/2 cup maida

1 spoon oil

1 cup water

Ingredients for stuffing

1 cup ground moong dal atta

1 teaspon aniseeds9sauf)

t teaspoon garam masala

1 teaspoon red chilli powder

1 teaspoon grounded coriander seed

Method for puris-Make atight dough from the ingrediesnts for puris.leave aside.

Method for stuffing-Roast all the stuffing ngredients for 3-4 minutes in a non stick vessel.Let it cool.Add 1 spoon oil and a little water and make small balls.

METHOD-NOW roll the puris into small rounds and stuff the stuffing and stick the ends,roll with hand and then deep fry till a nice red colour comes.Crispy khasta kachoris are ready.

Crispy bhajiyas(frm leftover rice)

Ingredients-1/2 Cup grinded moong dal(in a coffee grinder)

1/2 cup grinded rice 9in a coffee grinder)

1/4 cup ground crushed brokenwheat(in coffee grinder)

left over rice crushed in a mixture(optional)

4-5 green chillies

2 cups channa dal atta

dahi-2 cups

1/2 bunch cilantro(cut into small pieces)

oil to deep fry

Method-Mix all the ingredients together and make round bhajiyas and deep fry.

optional-you can also add vegetables of your choice.

Dal dhokli

Boil tuver dal with a small dushi and tomatoe and saragwani sing in pressure cooker.Let 3-5 whistles ring .After cooker cools down,remove dal,dudhi and tomatoe and crush together in a mixture.Take a chaini with big holes and seive dal,dudhi and tomatoe juice.Put to boil adding 10-12 glasses of water in it.Add a little jaggery to it.Add lal mirchi,haldi and a little sambhar masala to it.Keep boiling.Take 1 spooon oil in a vessel and add 1.2 spoon mustard,3 cloces,1 stick cinnamon 1 spoon jeera ,aliitle hing and 2-3 spoons sing .Add the vaghar to the dal and keep boiling.AFTER 20 minutes of boiling,shut off the gas.Add Lemon juice-3 spoons or more according to taste.

on the other side make thepla lot.Make 5-6 dhoklis and rest theplas.

For thepla-Take 21/2 cups flour,add lal mirchi,haldi ,ahma and salt and a little oil and make atta.round 6-7 big theplas for dhoklis,rest make theplas.

Paneer chilli

Ingredients-

1 kilo punjab paneer cut into squares and saute in 1 spoon oil

2 green onions

1 clov garlic

small ginger pieces

3-4 green chillies

1 big green capsicum

1/2 cup soya sauce

2 tablespoons ketcup

1 teaspooon vinegar

2 spoons maida

2 TEASPOONS OILMethod-Fry the paneer into square pieces.Keep aside.Take 2 teaspoons oil and saute green onions,capsicum,garlic,ginger for 2 secs.Dont saute too much,let the clolour of vegetables stay.Keep aside.In another vessel mix soya sauce,kethup and maida and boil till the colour becomes dark black.Keep aside.When people sit to eat,mix the paneer,teh sauted vegetables and the sauces.Garnish with coriander.Paneer chilli is ready.

Variations-YOU can saute brocoli instead of fried panner or abby corn etc and add to teh soy sauces.

Baklava-Greek sweet

Cook Time: 35 minutes
Ingredients:
1 pound frozen phyllo sheets
1 cup melted butter
2 cups finely chopped walnuts or blanched almonds
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
3/4 cup sugar
vanilla extract
3/4 cup waffle syrup
1/4 cup water
1 tablespoon lemon juice
Preparation:
Directions for baklava
Thaw phyllo pastry and separate sheets according to package directions. Keep pastry not being used covered with clean damp dish towel to keep it from drying out. Place half of pastry sheets in a greased 15×10x1-inch baking pan, one by one, brushing each sheet quickly and all over with melted butter. Combine nuts, 1/2 cup sugar, and cinnamon and vanilla extract; sprinkle over buttered pastry. Place remaining sheets on top, brushing each with melted butter. Cut baklava pastry into 2-inch diamonds. Bake at 400° until brown and crisp, about 30 to 35 minutes. Meanwhile, in a saucepan, combine remaining 3/4 cup sugar,waffle syrup, 1/4cup water, and lemon juice; bring to a boil. Boil baklava syrup for about 20 minutes, stirring occasionally, until syrupy. Cool and pour over baklava.

Sev puri on baked lays

Ingredients-

2 packet baked lays(potato wafers)

1 cup sprouted mug

1 small chopped onion

1 boiled anad chopped potato

tamarind-date-apple butter chutney

green chutney

chat masala

garlic chutney(optional)

sev

coriander leaves for garnishing

Method-Mix the apple butter and tamarind-date chutney.Add chat masala to it Spread baked lays on a plate and put mug,potatoes.onions on each wafer.Then add the 3 chutneys.Add sev on top.Garnish with coriander leaves.Eat immediately or it will get soggy.Delicious sev puri is ready.

CEREAL(frosted flakes) CHEVDA

Ingredients

2 cups Kellogs frosted flakes

1/2 cup peanuts

2 green chillies

5-6 curry leaves

1 spoon oil

1 spoon sesame seeds

salt to taste

1 spoon chilli powder

1 spoon turmeric powder(haldi)

Method-Take 1 spooon oil in a vessel and saute peanuts,sesame seeds,green chillies for 2 mins and then add the creal,saute for 2 seconds and add salt,chilli powder and haldi.Delicious corn flakes chevra is ready.
